Nutmeg Pumpkin Wedges

 

 

400 g (14 oz) pumpkin, peeled, cut into 4 wedges

8 teaspoons olive oil

1 teaspoon ground cumin

pinch ground nutmeg

salt and pepper, to taste

 

 

1. Preheat oven to 200 C (400 F) or 180 C (350 F) for fan forced.

 

2. Place pumpkin in a bowl; drizzle with oil, sprinkle with spices.

Season with salt and pepper. Toss to coat.

 

3. Place in a roasting pan and bake for 25 to 30 minutes or until

tender, turning halfway through cooking.

 

 

Serves 2.
