They held together nicely and had a soft texture (similar to Farmhouse cookies or the frosted soft sugar cookies in stores that we can no longer eat!). Gingerbread Men INGREDIENTS * 1/2 cup Spectrum shortening * 1/2 cup packed brown sugar * 3 1/4 cups sifted all-purpose gluten-free flour (Quick Mix <http://www.inagardenfoods.com/gourmet%20mixes%201.htm> or Multi-Blend <http://www.authenticfoods.com/product.htm>) * 1 teaspoon salt * 1 teaspoon aluminum-free baking soda * 1/2 teaspoon ground cinnamon * 1/2 teaspoon ground ginger * 3/4 cup molasses * 1/4 cup water DIRECTIONS 1. Cream shortening and sugar. Sift flour with salt, soda and spices. Blend flour mixture into creamed mixture alternately with molasses and water. Chill at least 1 hour (I let mine sit in the fridge overnight because I'm lazy like that). 2. Preheat oven to 350 degrees F (180 degrees C). 3. Roll dough to 1/4 inch thick. Cut with gingerbread man cookie cutters. Lift onto cookie sheet lined with parchment paper (I just slide the whole paper sheet off and slide the new one on so I can roll and cut while they are baking). 4. Bake for 8 -10 minutes or until cookies spring back lightly in center. Do not overcook, they won't stay soft (my oven is 8 minutes for perfect cookies). Remove from sheets. (Want something really yummy? I tried a bit of fluffy white frosting sandwiched between two of these cookies - a gingerbread whoopie pie. MMmmmmm.)
