Pizza Base Mix

 

 

Fills an 8 litre/quart container.

Makes 24 pizza bases.

 

 

12 cups tapioca starch (-OR- potato starch)

8 cups brown rice flour

8 cups besan (chickpea/garbanzo bean flour)

3 cups soy milk powder (-OR- DariFree)

1 cup less 2 teaspoons xanthan gum

1/2 cup Italian herbs (or mixed herbs)(optional)

1/2 cup agar powder (optional)

1/2 cup salt

1/4 cup sugar

 

 

Ingredients will need to mixed in 2 equal parts to fit in the bowl.

Using a whisk thoroughly mix ingredients in a bowl. Place in container.

To Make Bases:

1 PIZZA

 

Dry Ingredients ;

 

3 teaspoons dry yeast granules

1 1/3 cups Pizza Base Mix

 

Wet Ingredients

 

2/3 cup warm water

1 teaspoon apple cider vinegar

1 teaspoon olive oil

 

rice flour for dusting

 

 

3 PIZZAS

 

Dry Ingredients

 

9 teaspoons dry yeast granules

4 cups Pizza Base Mix

 

Wet Ingredients

 

2 cups warm water

3 teaspoons apple cider vinegar

3 teaspoons olive oil

 

rice flour for dusting

 

 

 

4 PIZZAS

 

Dry Ingredients:

 

1/4 cup dry yeast granules

5 1/3 cups Pizza Base Mix

 

Wet Ingredients:

 

2 2/3 cups warm water

4 teaspoons apple cider vinegar

4 teaspoons olive oil

 

rice flour for dusting

 

 

 

1. Preheat oven to 220 C (430 F).

 

NOTE:If using roasted veggies place these in the oven before making

the base. They will take around half an hour to roast.

 

2. Line a pizza tray with non-stick baking paper.

 

3. Combine dry ingredients.

 

4. Combine wet ingredients. Add to dry. Beat for several minutes. The

dough will be soft and sticky.

 

5. Using wet hands spread the dough over the prepared tray. Sprinkle

the dough with rice flour and finish spreading and neatening the base.

 

6.Bake in preheated oven for 10 minutes.

 

NOTE: Bases can be made to this stage and frozen for later use.

 

7. Top with desired toppings and back for a further 20 to 25 minutes.
