Guest guest Posted December 7, 2008 Report Share Posted December 7, 2008 Bean & Basil Salad 6 teaspoons olive oil 200 g (7 oz) green beans, trimmed 200 g (7 oz) butter (yellow) beans, trimmed 1 large red capsicum (bell pepper), thinly sliced 420 g (15 oz) can four bean mix, drained and rinsed 1/4 cu[ small fresh basil leaves salt and pepper, to taste 1. Heat 2 teaspoons oil in a large frying pan over medium heat. Add green beans, butter beans and capsicum (bell pepper). Cook 2 to 3 minutes or until softened. 2. Add four bean mix. Cook for 1 minute or until heated through. Remove from heat. 3. Add basil leaves. Season with salt and pepper. Drizzle with remaining oil. Toss to combine. Serve. Serves 6.
