Guest guest Posted December 5, 2008 Report Share Posted December 5, 2008 Watercress & Celery Salad 3 celery stalks, trimmed 100 g (3 1/2 oz) watercress, trimmed, washed 1 large avocado, halved, thinly sliced 1 Lebanese (Mediterranean) cucumber, cut into 1 cm (3/8 " ) cubes 8 teaspoons olive oil 8 teaspoons white vinegar 1 teaspoon Dijon mustard salt and pepper, to taste 1. Using a vegetable peeler or sharp knife, cut celery lengthways into thin strips. Place in a bowl. 2. Add watercress, avocado, and cucumber. Toss to combine. 3. Place oil, vinegar and mustard in a screw-top jar. Season with salt and pepper. Secure lid and shake to combine. 4. Pour dressing over salad. Toss to combine. Serve. Serves 8.
