Guest guest Posted December 5, 2008 Report Share Posted December 5, 2008 Christmas Bruschetta 12 slices suitable GF bread -OR- rolls 6 truss tomatoes, diced 8 tsp chopped fresh basil leaves 8 tsp extra virgin olive oil plus extra for drizzling 8 tsp red wine vinegar 1 clove of garlic, peeled salt and pepper 1. Combine diced tomatoes, basil, olive oil and salt. Allow to stand. 2. Drizzle bread lightly with oil, place on baking tray and grill until golden. 3. When bread is toasted rub garlic over the hot bread. 4. Spoon tomato mixture over bread, drizzle with extra oil and sprinkle with basil. Serve immediately.
