Guest guest Posted December 5, 2008 Report Share Posted December 5, 2008 Warm Asparagus and Bean Salad 8 tsp olive oil 1 cup fresh GF breadcrumbs 2 garlic cloves 2 tsp finely grated lemon rind 1 bunch asparagus, trimmed 300 g (10 1/2 oz) green beans, trimmed 4 tsp extra virgin olive oil 4 tsp lemon juice 1/2 tsp Dijon mustard 1. Heat olive oil in a large frying pan. Add breadcrumbs and stir over medium heat for about 7 minutes, or until golden. 2. Add whole garlic cloves and lemon rind, and stir for 1 minute, until the breadcrumbs are crisp and golden brown. Transfer to a bowl. 3. Place asparagus and beans into a large heatproof bowl, and cover with boiling water. Stand for 5 minutes, then drain well. 4. Whisk together the extra virgin olive oil, juice and mustard. Pour over the vegetables, season and toss to combine. 5. Arrange on a serving platter, and sprinkle with the crumb mixture. Serve immediately. Serves 6.
