Guest guest
Paprika Potatoes 1.5 kg (3 1/3 lb) large potatoes olive oil spray paprika, to dust salt, to taste 1. Preheat oven to 190 C (390 F) or 170 C (340 F) for fan-forced. 2. Line a large baking tray with non-stick baking paper. 3. Peel potatoes, then cut them into pieces roughly the same size by cutting smaller potatoes in half, and for slightly larger potatoes, cut about one-third from one end, then cut the other piece in half. 3. Place potatoes into a large saucepan and cover with water. Cover saucepan and bring to boil. Uncover immediately and cook 5 minutes. Drain well. Cool slightly. 4. Place the potatoes flat side down on the baking tray. Using a fork, score lines into the potatoes to make a rough surface. Spray potatoes with oil, then dust lightly with paprika and salt. 5. Bake for 1 hour and 15 minutes, until crisp and golden brown. Serve immediately. Serves 6.
