Guest guest Posted October 23, 2008 Report Share Posted October 23, 2008 Grilled Asparagus with Chilli Salsa Chilli Salsa, to serve (recipe below) 3 bunches asparagus, woody ends trimmed 4 teaspoons olive oil 1. Make salsa as recipe directs. 2. Toss asparagus in oil. 3. Preheat char-grill or barbecue to high. Grill asparagus for 4 to 5 minutes or until tender but still bright green. 4. Transfer to a platter; top with salsa and serve. TIP: Serve salsa with other grilled vegies, too. TIP: For less heat, remove seeds from chillies. Serves 6. Chilli Salsa 2 small ripe tomatoes, finely chopped 1/2 small red onion, finely chopped 2 long red chillies, finely chopped 1/4 cup finely chopped coriander (cilantro) 8 teaspoons olive oil 4 teaspoons red wine vinegar 1. Combine all ingredients in a bowl. 2. Cover with plastic food wrap; refrigerate until needed. Best served at room temperature. Makes about 1 1/3 cups.
