Guest guest Posted October 17, 2008 Report Share Posted October 17, 2008 We are a family that also can not do rice, so we have really had to look at alternatives since most of the stuff available around here in GF sections is based on Rice. We bought (Bobs red mill) Amaranth flour and it has a pancake recipe on the back. We use egg replacer and olive oil, and it calls for apple juice or milk sub, we use AJ. I also add a handful of GFCF chocolate chips. My 3 kids eat them up, there are never any leftovers and they will eat them warm or cold, with or without syrup. Also, luckily it is something I make up ziplocs of the dry ingredients once a week, and then all I need is to add the wet and cook. Also if the morning is going to be rushed, I can make them up after the kids have gone to bed the night before for the next morning.
