And the colour is just stunning!!! 500 g (17 2/3 oz) beetroot (cooked, peeled) 1/2 cup buckwheat flour 1/2 cup polenta 1/2 cup cornstarch (cornflour) 1/2 cup Orgran Plain Flour (-OR- other GF flour blend) 3/4 cup walnuts, chopped 1 cup raisins -OR- sultanas 1 1 /3 cup orange juice, fresh 1/4 cup applesauce, unsweetened 2 tsp cinnamon 1 tsp cloves, ground 1 1/2 tsp nutmeg 2 tsp GF baking powder 1. Preheat the oven to 220 C (430 F). 2. Line a loaf tin with non-stick baking paper. 3. Place the beetroot and applesauce in a food processor and process until the mixture has a creamy consistency. 4. Add the orange juice and mix until combined. 5. In a bowl mix all the flours, spices and baking powder. 6. Add the beetroot mix, nuts and fruit and combine. 7. Pour into a lined loaf tin and bake in the oven for about an hour or until a knife comes out clean (every oven is different, which can vary the cooking time). 8. You can serve this loaf with icing (vegan cream cheese, margarine, vanilla essence orange peel and a bit of stevia to taste), or toast it and serve it with plain or with margarine.
