Vegan Macaroni Salad

 

1 12 ounce package macaroni elbows, cooked

1 large or 2 small carrots, finely grated

2-3 stalks celery, chopped

¼ cup chopped parsley

½ cup frozen peas, thawed

1 cup Veganaise or plain soy yogurt (unsweetened if possible) or a mix. Yogurt

will cut the fat.

1 T horseradish mustard

¼ cup sweet pickle relish

1 ½ tsp dill weed

salt to taste

¼ tsp white pepper

 

Stir together Veganaise and or soy yogurt, mustard, relish, dill weed, salt and

pepper. In are large bowl stir together the rest of the ingredients. Add the

dressing to the macaroni and vegetables and stir well. Chill for at least 1 hour

and adjust seasoning before serving.
