Guest guest Posted January 14, 2010 Report Share Posted January 14, 2010 I'm doing the PCRM 21-day vegan kickstart, and thought I might respond to the concern that the program lacks fruits and veggies. In my experience, it's inaccurate to say the plan lacks fruits and vegetables. If you take a close look, the recipes and suggested menu options incorporate fruits and vegetables. For example, I had last night's Swiss steak, made with seitan. The dish is really a stew dominated by mushrooms, red peppers, tomatoes and onions. That's four veggies. Plus, the recipe suggests serving it with a green salad, which brings the total to five veggies in one meal. (I served it to an omni friend who was blown away by how tasty it was!) Today's menu also incorporates plenty of fruits and vegetables: * Breakfast: Green Goodie Smoothie and Toast * Lunch: Kickstart Dining Out: Salad Bar * Snack: Apple * Dinner: Lentil Artichoke Stew with Roasted Sweet Potato Wedges So far I'm finding the kickstart to be a lot of fun. I was already vegan, but the challenge is encouraging me to eat more healthfully -- less fat and processed sugar, more whole grains and PLENTY of fruits and veggies. Weirdly, I rather enjoy the daily emails and dorky celebrity phone calls. It's also pointed me to several tasty and healthy recipes. It's also not a strict diet but rather a guide for eating healthily. Is anybody else do the kickstart? I'd be interested to learn about others' experiences. Cheers!
