vegan cookies

I have one for vegan peanut butter cookies that is super healthy (and

delicious!). Not quite cookie cutter or press cookies, but maybe someone would

like to make it...Can't remember which cookbook I got it out of, but I believe

it was a vegetarian cookbook for kids. Be careful, they burn quickly! I have

made them with honey and the applesauce.

 

 

Vegan Peanut Butter Cookies

1 cup natural peanut butter (I use salt-free)

1 cup honey OR maple syrup

1/2 cup unsweetened apple sauce OR mashed bananas

3 Tbsp vegetable oil

1 1/2 tsp vanilla

2 1/2 cups wheat pastry flour

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1 cup chocolate chips (optional)

 

Directions

1.Heat oven to 350 degrees.

2.Grease cookie sheet and lightly dust with flour (or use baking mat)

3.In bowl, whisk peanut butter, syrup or honey, applesauce or bananas, vegetable

oil, and vanilla until smooth.

4.In large bowl, mix flour, baking powder, baking soda, and salt.

5.Make a well in center of dry mix.

6.Pour liquid mix into dry mix and stir until well-blended.

7.Add chocolate chips and stir.

8.Shape dough into 1 1/2 " balls. (Refrigerate dough if too sticky).

9.Place on cookie sheet.

10.Dip fork into flour and press down on cookies to flatten.

11.Bake 10-12 minutes, carefully watching to avoid burning.

12.Cool on racks.

There's a recipe for goldfish crackers in Vegan Lunchbox. I think it's on

the website / blog, too.

I have had this recipe for a few years. It may have originally come from Vegan

Lunchbox; I am not good about noting the origin of recipes:

makes several dozen

 

2 ¾ cups white flour

2 tablespoons nutritional yeast flakes

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon paprika

1/8 teaspoon cayenne

½ teaspoon onion powder

½ cup canola oil, chilled in the freezer for at least 30 minutes

½ cup ice water

1 tablespoon apple cider vinegar

Orange food coloring, as desired

Olive oil cooking spray

Fine sea salt, to taste

 

Preheat the oven to 375ºF. Line baking sheets with parchment paper and spray

with nonstick spray.

 

Combine the flour, nutritional yeast, baking soda, salt, paprika, cayenne, and

onion powder in a medium mixing bowl and whisk to combine. Drizzle in the cold

canola oil and toss with your fingers until the oil is incorporated and the

flour has formed small to medium-sized clumps. Add orange food coloring to the

flour mixture, if desired.

 

Mix the ice water and apple cider vinegar together and drizzle it over the

flour, stirring with your fingers until the dough holds together.

 

Turn out the dough onto a lightly floured work surface. Knead a few times,

adding a bit more water if needed to form a cohesive dough. Use a rolling pin to

roll the dough out thinly, about 1/8-inch thick.

 

Cut out fish shapes using a small cookie cutter. If you would like to make happy

fishies, use the curved tip of a spoon to give them a smile and a toothpick to

give them an eye.

 

Place the fish on the baking sheets, spray with olive oil and sprinkle with fine

sea salt.

 

Bake for 10 minutes, or until lightly golden on the bottom. Slide the parchment

paper covered with fish onto a wire rack to cool.

I tried this this morning. It was an excellent recipe! We like peanut butter

here and I thought it had a nice flavor. Thank you for the recipe!! We used

honey and apple sauce, too.
