We live in Sonoma County, and I have been a vegetarian since my late teens, and am raising my 3 children vegetarian. They are aged 5, nearly 8 and 10. They go to a Charter Waldorf school. My diet is mostly vegan, but I occasionally eat local free range eggs. The children still like their dairy, but I have been reducing the amount they eat. My husband has been vegetarian since we met, and was raised on a diet very low in meat anyway. He has a hereditary high cholesterol condition, so a vegetarian diet is healthier for him anyway. I do have a question. Recently, he started researching vegan diets that are extremely low in fat. Although I am delighted he wants to be vegan, but I am uncomfortable with a diet that includes no oils, no nuts and no avocado. Can that really be healthy?
