I boiled about 8 dried dates in a half cup of water and pureed them as a substitute for the maple syrup I can't get here. It was by far the BEST substitute to date! (pun intended) DH and DS agreed that this was the way to go! Thanks all for your suggestions. (PS someone had suggested molasses, and while I'm a huge molasses fan for it's taste and iron benefits, it's big flavor was not something I wanted in my vegan chocolate cake. You could probably order maple extract (or find it somewhere?) and add it to the date mixture for a better maple syrup flavor. Thanks for the recipe!
