Guest guest Posted November 6, 2009 Report Share Posted November 6, 2009 For our " main course " for Thanksgiving I make a " Golden Lentil and Chestnut Roulade with Mushroom Gravy " . The recipe is from Vegetarian Times. I lost my issue and once posted at Amazon looking for it and someone sent me copies. Vegetarians are SOOO nice. Anyway, you can get the recipe off their website. The same issue has a great Cranberry Orange relish as well. I make the all American green bean casserole sometimes using Imagine Foods Portabella Mushroom soup instead of the Campbells (or the gravey recipe from the Fit For Life cookbook). There are healthy alternatives to the French's Onions but they are pricey. Also make the sweet potatoe/pineapple casserole with vegan marshmellows on top and GREAT Sweet Potato Biscuits (recipe also archived in VT). My kids look forward to this meal all year. I I also do a vegan " dressing " as they call it down South (can't really call it stuffing if you aren't actually stuffing anything can you?). I let whole wheat bread go stale (or toast it), saute onions, celery, pecans, veggie sausage, apples together pour on top of the bread cubes, bake and YUM!!!!
