Guest guest Posted July 23, 2009 Report Share Posted July 23, 2009 Hey Ladies, We have an abundance of zuchini, so I made a vegan lasagna featuring fresh zuchini. I sliced the zuke in round thick wheels, then layered them twice in the lasagna. I used galaxy veg mozzarella for cheese, and in the sauce i put fresh parsley, nutrional yeast, and fresh basi. The zukes were a great touch and I will making more in large batches to freeze.
