We plan our meals for the week before we go to the store, so I got him involved with that. The first night we had the Mexican Casserole recipe from Vegan Family Favorites (except I use ground seitan instead of tofu), the next night we went out to eat for by daughter's birthday, the third night we had been burritos (and he liked the vegan rella this time! I think I was using follow your heart brand last year...), the next night we have fettuccine (made with the Mimic Creme) with broccoli and seitan, and the last night we had the Veggies and Dumplins recipe from Vegan Family Favorites. He ate all of them and even liked them! I had bought a package of the Uncrustables but we didn't use them at all! Thanks for all the encouragement and ideas! I love this group!
