This spring we have been enjoying different ways to serve abundant asparagus, and roasting them is my new favorite. Roasted Asparagus 1 bunch thin asparagus (about 1 1/2 pounds) 1 1/2 tsp. olive oil 3 garlic cloves, finely chopped 1/4 tsp. coarse sea salt Preheat oven to 500 & #730;F. Lightly coat baking sheet with non-stick spray. Bend the asparagus until it snaps and discard the woody ends, if necessary. Arrange the stalks in a single layer on the prepared baking sheet. In a small dish, combine the oil and the garlic. Drizzle over the asparagus. Sprinkle with the salt. Roast for 5 minutes. Shake the pan to redistribute the oil. Wal-Mart had beautiful asparagus for $1.50/lb last weekend. It's been on sale each week at one Grocery store or another for about $2/lb. Have you tried making a pureed soup with it.
