Karo Sent from my Verizon Wireless BlackBerry sissy <pepepukpetunia Wed, 10 Mar 2010 17:05:19 Hummus with Tofu (the tofu cuts the fat in this recipe) Hummus with Tofu 1 1/2 teaspoons cumin 19 ounces garbanzo beans, drained 12 ounces tofu, drained 3 tablespoons lemon juice 2 tablespoons olive oil 1/4 cup parsley, chopped fine In a food processor, puree garbanzo beans, tofu, cumin, lemon juice and 1 tbsp. of oil until smooth. Stir in parsley and salt and pepper to taste. Put in bowl and drizzle with remaining olive oil and sprinkle with add'l parsley. Serve with pita bread or crackers.
