Guest guest Posted October 11, 2009 Report Share Posted October 11, 2009 This is a great economical soup. Serve it with some warm crusty bread and you will feel warmed right through. I like to add a few shakes of hot sauce to my bowl. It is like a simple country soup from Russia. You just can't mess it up so feel free to add other good veggies you have in the pantry. Cabbage Soup 2 cups chopped onions 1 Tbs. olive oil 2 cups diced carrots 2 cups diced potatoes 2 cups diced celery 8 cups no-chicken broth 1 large head green cabbage, cored and chopped 1/4 tsp. caraway seeds Garlic powder to taste Salt and pepper to taste Sour cream (optional) In a large soup kettle, saute the onions in the olive oil until soft. Add carrots, potatoes, celery and broth. Bring to a boil and reduce heat and simmer covered for 30 minutes or until vegetables are tender. Add cabbage and sprinkle with caraway seeds. Do not stir. Cover and cook another 5 minutes or so. Stir and add seasonings. Cook for an additional 5 minutes. Serve garnished with sour cream if desired.
