If you don't have this book, it's a wonderful story about the ranch and the children who come there and has so many yummy vegan recipes too!! We had green chili enchiladas last night that my daughter made a special vegetarian pan just for me with black beans. Tonight I am thinking spaghetti, garlic bread, salad... simple comfort food, with veggie meatballs for me. Plus, we also have quinoa vegetable salad, and will have a salad! My hubby is quite the chef! Yours sounds good! It is getting colder here, so simple comfort food is great! I do love spaghetti. We have been trying different spaghetti pastas. One was artichoke flour pasta. Pretty interesting! So much variety in things anymore, which is a good thing! I make toast and add Morningstar Farms bacon with an egg or eggbeaters, whichever I have, and some cheeze.
