Guest guest Posted September 23, 2009 Report Share Posted September 23, 2009 Here is a recipe you can make either vegan or lacto-ovo vegetarian, depending upon your lifestyle. It is one of my favorite ways to enjoy carrots that are cooked. Horseradish Creamed Carrots 1 lb. carrots, cut into 1/2 inch slices 1/2 cup vegennaise [or regular mayo, your choice] 1/4 cup soy milk [unflavored] 3 Tbs. prepared horseradish 1 Tbs. finely minced onion 1/2 tsp. salt pinch of pepper 1/4 cup finely crushed corn flakes cereal 1 Tbs. soy margarine, melted Place an inch of water in a pan, add carrots, bring to a boil. Reduce the heat, cover and simmer for about 6 to 8 minutes or until crisp-tender; drain In a bowl, combine mayo, soy milk, horseradish, onion, salt, and pepper; add the carrots and stir to coat. Transfer to a greased baking dish. Combine corn flake crumbs and melted margarine; sprinkle over carrots. Bake, uncovered, at 350 & #730; for 20 minutes, or until bubbly.
