I decided to go vegetarian for Lent because I tend to not like meat anyway and found myself falling into a rut of just microwaving a lean pocket or something. Ever since becoming vegetarian I have seen a huge change in the way I cook/eat. I eat only freshly cooked meals now! I have not cooked this much in.... ever! I was always eating microwave meals or maybe a quick lunchmeat and cheese sandwich. Wow, it almost feels like freedom because I am discovering I have so many choices by cooking my own meals. I am loving finding new vegetarian recipes as well. I just might stay this way after Lent, however I do see I have been craving boneless hot wings lately. I'm thinking its just the hot sauce I'm actually craving and am trying to think of a way to satisfy my craving. Otherwise, I do reallly enjoy my new found vegetarianism.
