I have only been vegetarian since September and all I can find is mushroom gravy and I hate mushrooms. Does anyone know of another yummy gravy for mashed taties? Thanks. Sarah in CA - Re: QOTW: Favorite Thanksgiving Leftovers? My husband makes Tofurky casserole the day after the Thanksgiving with all the leftovers. He layers in a casserole dish with stuffing, then sliced Tofurky, roasted vegetables and tops it with mashed potatoes. Bakes it in an oven until warm & the potatoes turn a little crispy. Guest guest Posted November 30, 2009 Report Share Posted November 30, 2009 Hi Sarah! I make a delicious gravy out of soybean juice - the juice leftover in the crockpot when I cook soybeans. I cook up a pot of soybeans every couple of weeks, for a soybean spread I make for a dip and for sandwiches, and I have a lot of juice leftover in the crockpot. So one day, I decided to experiment with it. I made a roux of butter and flour, and then used the soybean juice to whisk in, and it thickened beautifully and was the most delicious gravy! So now I store my soybean juice in plastic containers - not filled to the top, or they would overflow as they froze, in the freezer section of my refrigerator. I can pull one out the night before, and put it in the refrigerator and let it thaw all night and the next day, and I'll be able to make gravy that night. If you don't have enough juice, use some warm water to help make up the gravy. Or milk. You can make this vegan by using Earth's Balance margarine blend, which is made totally non-dairy, and adding no milk. In fact, just now, thinking about it, I'm wondering about storing any canned beans juices that I normally drain down the sink - saving them for gravy - I could probably just save them all to the same container, and they would make a tasty gravy, but the soybean one is especially good. But now I'm going to save the juice from the other beans in cans, and see how they turn out. My daughter was about 8 years old when I first tried the soybean gravy and she loved it and still does, and so did my husband, but he says he can't think of it as soybean gravy, so he just calls it brown gravy.
