I have had veggie loaf recipes and bean burgers that came out too soft for slicing before, but I just would use them as sandwich spreads. I love, love, love your idea to roll them into balls and bread crumbs to fry up. Like little falafels! *lol* You are right, there is always a way to salvage a recipe with some creative inspiration.... well almost always. I remember once my husband was trying to help me and he accidentally used powdered sugar instead of flour when he made a paste to thicken a stew. UGH!
