I didnt reilize that there was much of a diffrence in the colors. I thought it was kind of like with rice. You have white, brown, wild ect. they are diffrent but interchangeable. They are smaller than regular brown lentils and cook more quickly. I posted a wonderful soup recipe using them. I highly recommend trying it.
