Guest guest Posted September 2, 2009 Report Share Posted September 2, 2009 This is a recipe I got back in the '80s from some great Hawaiian Vegetarian recipe cards a co-worker gave to me... best gift ever. Give this recipe a try soon. Zucchini Cheese Casserole 3 lb. zucchini cut into 3/4 cubes 1 medium onion, diced 2 large cloves garlic, minced 1/2 tsp thyme 4 Tbs butter 6 Tbs flour 1 tsp salt or to taste 1/2 tsp pepper 1 can (7 oz) can diced green chilies 2 cups Jack cheese, grated 1 egg, beaten (optional) 3 cups cottage cheese 4 Tbs. parsley, minced (preferably fresh) 1/2 cup Parmesan cheese Melt butter in pan and saute zucchini, onion, garlic and thyme. Add flour, salt, pepper and chilies. Mix well and pour into a 9x13 pan. Mix Jack cheese, egg, cottage cheese and parsley and spoon over top. Sprinkle with Parmesan cheese.
