Oops, didn't meant to say to peel that squash. Peel the eggplant instead. You

can use a vegetable peeler.

Easy Eggplant Dish

 

INGREDIENTS (Nutrition)

a.. 1 eggplant, diced

b.. 1 yellow squash, peeled and diced

c.. 1 cup chopped onions

d.. 2 garlic cloves, sliced thin

e.. 1/2 c. diced green bell pepper

f.. salt to taste

g.. 1 T. oil

h.. 1 cup dry italian bread crumbs

i.. 1/2 t. cayenne pepper

j.. 1 tablespoon butter

k.. 1/8 cup canned sliced green chiles

l.. 1/3 cup crushed buttery round crackers

m.. 1/2 cup shredded mozzarella cheese

DIRECTIONS

1.. Preheat oven to 350 degrees F (175 degrees C).

2.. Heat the oil in a large skillet and saute eggplant and squash, onions,

bell pepper, and garlic. Cook until tender but still firm, about 10 minutes. Add

salt to taste.

3.. In a 2 quart sprayed(non-stick spray) casserole dish combine eggplant,

squash, bell pepper, onions, bread crumbs, cayenne pepper, butter and chiles.

Sprinkle crushed crackers and cheese over the top.

4.. Bake in preheated oven for 30 minutes.
