Guest guest Posted July 25, 2009 Report Share Posted July 25, 2009 Swedish Brown Sugar Cardamom Cookies 1/4 cup butter, softened 1/3 cup brown sugar, firmly packed (light or dark) 1 egg white, cooked slightly 1 tsp. lemon juice 1 tsp. vanilla extract 1 cup all purpose flour 1/2 tsp. ground cardamom 1/8 tsp. salt (necessary) nonstick vegetable spray 1/4 cup powdered sugar, sifted 1 tbsp. skim milk or soy milk Preheat oven to 375 degrees. Combine butter and sugar in a mixing bowl. Beat with an electric mixer at medium speed until fluffy. Add egg white, lemon juice and half the vanilla. Mix thoroughly. Sift together flour, cardamom and salt. Gradually add to sugar mixture. Beat well until mixture forms a soft dough. Transfer dough into bottom of an 8 inch square baking pan coated with cooking spray. Bake 35-40 minutes. Cut immediately into squares. Cool completely on wire rack. Combine powdered sugar, milk and remaining vanilla in a bowl. Mix thoroughly. Drizzle over cookies. Serves 12.
