I love how artistic you have been with food. Inspired by you but on a much smaller scale I made potato rosti for the first time today and shaped it with heart-shaped cookie cutter moulds before cooking it. Guest guest Posted July 21, 2009 Report Share Posted July 21, 2009 Oh YUMMY, I love potato rosti! But then, come to think of it I pretty much have never found a potato I didn't like. Sometimes it helps me eat a lot less when I take the time to make it look appealing. Heaven knows by the time I finish making several pounds of assorted candies I don't want to even be in the same room with it! Today's bento had a base of leftover noodles in a quick lo mein, then put it in the box with a baked sweet potato, peeled and done in chunks with some toasted/candied pecans on top. I had grilled some pineapple this weekend and put a couple slices in each of our lunches. I put in a cup of the usual summer salad; sliced sweet onions, tomatoes and cucumber in a light rice wine vinegar/sugar/water dressing. The salad was good but didn't quite go with the other dishes. I did some roasted green beans, which were really wonderful and I didn't make any way near enough of those. All you do is drizzle with a light oil and sprinkle with a little salt and a couple grinds of pepper and roast them in a hot oven, turning them after about 5 minutes or so. You want to end up with some brown spots on the green beans. I used some of my fancy schmancy French sea salt on mine and no salt on Carl's. I was going to see if they would keep in the refrigerator to be put in lunch the next day but they kind of got eaten before lunch. There were a couple slices of pineapple left, so tomorrow I'll put a chunk of pineapple in each of the onigiri unless the husband person finds them in the refrigerator and eats them before bed. I made a sugar free sweet and sour sauce today so tomorrow I'll probably put a bed of greens in the box, a little of the sweet and sour sauce, then 3 onigiri for him and more sauce drizzled over it. Not sure what else I'm going to throw in lunches tomorrow. Carl did the shopping, which is a bad, bad, bad thing. You'd think after 42 years of grocery shopping with me, he'd be safe going to the grocery store armed with my shopping list. (which he forgot) At least he remembered potatoes and carrots and I was able to raid the garden for enough veggies to make a veggie stew with potato dumplings on top.
