I used pinto beans (although I wanted black...didn't have them in the pantry) and mashed them up a bit. I changed up the measurements a bit...using only 1 cup of bread crumbs and 1 cup of brown rice (I had the Uncle Ben's package of cooked brown rice...one of my favorite time savers). I had some homemade corn salsa in the fridge, so I added about a cup of that instead of all the veggies listed (basically the same). Quick, tasty and leftovers....characteristics of my favorite recipes. I will definitely make again. Place place 1 tablespoon oil in a medium cast iron skillet, heavy stainless steel skillet or a griddle. Heat the oil. Take a handful of the rice mixture and form a ball, then flatten slightly forming a round, thick burger. Place in the hot oil. Form 3 more burgers and place in the skillet. Cook over medium heat until a crispy, brown crust forms on the bottom of the burgers. Flip over and cook until browned and crispy. Remove and repeat the process until all of the burgers are done, adding oil to the skillet as needed.
