New American Potato Salad 2 1/2 pounds small red potatoes 1/3 cup no-chicken broth 2 tsp. Dijon mustard 1/4 cup Italian dressing 1 tsp. minced garlic 1/8 tsp. ground black pepper 2 Tbs. white wine vinegar [more or less] 4 green onions, thinly sliced 1/4 cup chopped parsley 1/2 cup chopped tomatoes Cook potatoes until just tender. Let cool enough to handle. Quarter warm potatoes and toss with the broth, mustard, garlic and dressing. Add pepper and adjust seasoning with the vinegar. Cool for 1 or 2 hours, tossing occasionally while cooling to blend flavors. When ready to serve, add green onions, parsley and tomatoes; toss gently.
