Guest guest Posted July 4, 2009 Report Share Posted July 4, 2009 Cheesy Sun Crisps 2 cups shredded cheddar cheese 1/2 cup grated Parmesan cheese 1/2 cup butter softened 3 Tbs water 1 cup flour 1/4 tsp salt 1 cup quick cooking oats 2/3 cup roasted salted sunflower seeds In a mixing bowl, combine the cheddar and parmesan cheese, butter and water until mixed well. Combine the flour and salt and add to the cheese mixture. Stir in the oats and the sunflower kernals. Knead until the dough holds together. Shape into a 12 inch long roll. Cover with plastic wrap and chill for 4 hours or overnight. Allow to stand at room temperature for 10 minutes before cutting into 1/8 inch slices. Place on a greased foil lined baking sheets. Bake at 400 for 8-10 minutes or until the edges are golden brown. Slide crackers off baking sheets to wire racks to cool. Yield: 8 dozen approx.
