Guest guest Posted June 21, 2009 Report Share Posted June 21, 2009 Homesteader Cornbread 1 1/2 c. yellow cornmeal 2 1/2 c. milk 2 c. all-purpose flour 1 T. baking powder 1 t. salt 1/2 c. sugar 2 eggs, beaten 1/4 c. vegetable oil Preheat oven to 400 degrees F. Spray a cast iron skillet or 8 x 11 in casserole dish with non-stick spray. In a small bowl, combine the cornmeal and milk; let set for 5 minutes. In a large bowl, stir together flour, baking powder, salt and sugar. Mix in the cornmeal mixture, eggs, and oil. Stir just until moistened. Pour batter into a prepared baking dish/cast iron skillet. Bake in the preheated oven for 35-40 minutes or until a knife inserted in the center of the cornbread, comes out clean. Yeild 8 - 12 servings.
