Guest guest
Hello everyone! I just returned from a 9-day camping trip, and developed some new recipes along the way using ingredients on hand. I'd picked up some dried TVP from the bulk food section of my local grocery store, and tried to include it whenever I could. For the basic breakfast scramble, I reconstituted the TVP using warm water and soy sauce. Browned the TVP in a skillet adding whatever I had on hand at the time. Onions, shallots, garlic, garlic shoots, kale, etc. Once the TVP mixture was browned, cleared out an area in the center of the pan and added beaten eggs. Stir fried until the eggs were set. Then added cheese, grated or finely cubed. This was delicious as is, or could be used for a burrito filling. The other variation I came up with was to finely cube potatoes, frying them until golden brown then adding the other ingredients. My only seasonings were salt & pepper. A nice one-pan meal!
