Guest guest
Great for potlucks and a salad side dish. Always a hit when I take it places. Judy Fire and Ice Tomatoes Flavorful tomatoes, with purple onion rings, bell pepper, vinegar, sugar, and seasonings. Ingredients: a.. 6 large tomatoes, peeled b.. 1 large green bell pepper, cut in strips c.. 1 medium red onion, sliced in rings d.. 3/4 cup cider or white vinegar or lemon juice e.. 1 1/2 teaspoons celery salt a.. 1 tablespoon plus 1 tsp sugar b.. 1 1/2 teaspoons mustard seed c.. 1/8 teaspoon red pepper, (cayenne) d.. 1/4 cup cold water Preparation: Cut the cores from tomatoes and cut each in 4 to 6 wedges. Place with green pepper and onion in a large bowl. Combine remaining ingredients in a saucepan and bring to boil. Immediately pour over the vegetables. Chill for at least 2 hours, turning occasionally. Serve cold. It is also pretty to layer thin slices of the tomatoes, red onion and bell peppers in the bowl pour the marinate over it. Sprinkle with some fresh mince parsley over the top before serving Makes 2 quarts.
