This is a recipe we enjoy and that I will be

making tomorrow for Cinco de Mayo. :)

Tex-Mex Rice

1 cup uncooked long grain rice (or rice of your choice)

1 medium onion, chopped

2 Tbs vegetable oil

2 cups boiling water

1 medium green bell pepper, chopped

1 1/2 tsp chili powder

1 tsp salt

1 can (14.5oz) diced tomaoes, drained

In a skillet saute rice and onion in oil until rice is

browned and onion is tender. Stir in the water,

green pepper, chili powder and salt. Bring to a boil.

Reduce heat; cover and simmer for 15 minutes or

until rice is tender. Stir in tomatoes; heat through.

Yield: 6 servings

Climb the mountains and get their good tidings.

Nature's peace will flow into you as sunshine flows

into trees. The winds will blow their own freshness

into you, and the storms their energy, while cares

will drop off like autumn leaves.
