St. Patrick's Day recipes - cabbage & noodles

Got this one from my CSA, and have made it several times since cabbage is

plentiful right now.

 

Shred a small head of cabbage (or half of a large one) and stir fry in oil or

margarine or butter (it will reduce quite a bit, so don't be afraid to fill the

pan with cabbage!) Meanwhile, boil a cup or two of egg noodles until tender,

drain and add to pan of cabbage with more oil/margarine/butter (enough to keep

from sticking). Stir fry until well-combined, season with salt & pepper.

 

Yummy!

Yes, I love cabbage and noodles prepared like that.

My husband's aunt used to make the best C & N dish

ever and I have done my best to replicate it in her

honor.
