Guest guest Posted July 19, 2003 Report Share Posted July 19, 2003 If you're referring to the Follow Your Heart cheeses, I have tried them. The Mozzarella & Monterey Jack are almost the same in texture and taste. They look pretty much like melted cheese but don't have the stringiness or quite the consistency of dairy cheese. It's more like melted cream cheese. The cheddar has a much different texture, harder, greasier. Don't bother trying to eat any of them cold.....nothing like cheese when cold. They're all pretty darn close to the same taste as their dairy counter-parts, just milder. I made a lasagna with the Monterey jack & mozzarella and I (and hubby) were quite happy with it. It wasn't quite like the original (no stringy cheese, etc.) but it definitely added something that was missing without any cheese. The cheddar was good in potato skins. As for all cheeses melting...regular cheese, yes, unless you get non-fat, vegan cheese rarely melts well. It may technically melt but not as evenly or smoothly (don't really know how to explain it) as normal cheese. Follow Your Heart is also the company that makes Veganaise (in my opinion the best Vegan mayo). They also sell Vegan chicken that's QUITE good. Better than Tofurkey, Unturky, Turkettes, Lightlife Chicken Strips, or any of the wheat meat I've had. It has a very firm texture, in density it's similar to white meat chicken/turkey, no real stringiness though. In moistness it's a cross between white and dark meat. It's pre-flavored with a slightly sweet marinade that makes it great to munch on right out of the package, cold. Would work great on sandwiches or anywhere chicken chunks are normally used. The only problem is that, depending on where you live, you could pay through the nose for shipping/handling/packaging as (again, depending where you live...they're based in CA) they may have to send it 2nd day air with insulation and cooling packs. Ordering 1 ea. of the 3 cheeses I mentioned and a 1 lb pkg of their Vegan chicken....the shipping for us is around $20. They do credit your credit card $5 for returning the box with the insulation case and cooling packs though. I'm able to get Veganaise in a couple health food stores near me but not the chicken or cheeses.
