My boyfriend , daughter, and I are all reformed carnivores and have been following a Vegan Diet for the past six weeks. I have never felt better! There is only one problem, my daughter's First Birthday is quickly approaching and I am a HORRIBLE cook I was curious to know if there were any commerial cake mixes on the market i.e. Duncan Hines, Pilsbury etc. that are Vegan???? I'm not sure where you are located, but there are alot of box mixes out there that you can use. Just read the ingredients to make sure there are no milk products added and you'll be fine. To substitute eggs in baked goods, I usually use 2 tablespoons applesauce and 1/2 tsp. baking powder per egg depending on the type of baked goods your making. This usually works well for cakes. Guest guest Posted April 8, 2003 Report Share Posted April 8, 2003 there are some vegan cake mixes out there, but not the major brands....duncan hinds and all those are nasty...dixie diner, up country, and thers make a variety of products... check pangea er vegan essentials Chocolate Goodness!! Ingredients: 1 1/2 cups all-purpose flour (white) 3 T. cocoa 1 t. baking soda 1 cup brown sugar or sugar in the raw 1/2 t. salt 5 T. oil 1 T. vinegar 1 t. vanilla 1 cup cold water Directions: Sift all dry ingredients together. Make a well and add wet ingredients. Stir well - no lumps! Bake in a geased 8" square pan for 35 mins at 350 degrees. Rich almost gooey chocolatey goodness, but pure vegan! Preparation time: 40 mins Chocolate Raspberry Mocha Layer Cake Ingredients: 2 cups unrefined sugar or brown sugar, sugar in the raw, etc 3/4 cup oil (substitute applesauce to lower fat content) 1/4 cup water 2 tsp vanilla 3 cups flour 1 cup cocoa 2 tsp baking soda 1/4 tsp salt 2 cups soymilk 1 shot of espresso or very strong coffee 1/4 to 1/2 cup fruit-sweetened raspberry jam Directions: Blend thesugar and oil. Add the water and stir well. Add vanilla extract. In a separate bowl, mix flour, cocoa, baking soda, and salt. In another bowl, measure out soymilk and espresso or coffee. Add the flour mixture gradually to the oil and sugar mixture, alternating with the soymilk. Pour batter into two oiled 9" pans and bake 40 minutes at 350 degrees. When cake is baked, remove from pans and cool on a wire rack. When cool to the touch, spread the top of the bottom layer with raspberry jam. Top with second cake layer and frost with your favorite vegan chocolate frosting. Enjoy! Delicious Raspberry Tofu Cheesecake Ingredients: 1 container of vegan cream cheese (Tofutti) 1 Tbsp. lemon juice about 12 oz. firm tofu (2/3 of a 15 oz. package) 1 cup granulated white sugar 1 tsp. vanilla extract 1 container vegan raspberry yogurt 1/4 tsp. cinnamon 1/8 c. vanilla soymilk vegan graham cracker crust raspberry pie filling to top fresh raspberries to garnish Directions: Preheat oven to 400 degrees. Crumble tofu by hand and then put into a blender along with all pie ingredients. Blend until completely smooth- this will be relatively thick. Pour into pie crust and bake for 45 minutes to 1 hour or until a golden 'skin' has formed on the top. Remove from oven and refrigerate several hours until cold. Top with a thin layer raspberry filling and sprinkle fresh raspberries on top of that. Delicious! Serves: 6-8 Preparation time: 15-20 min.
