Hi Minty,

 

I belive it was you who said you had to stop being vegan because you got

very underweight. I was wondering if you could share with me what you eat

over a typical week or so, the reason being is that I am nearly 16st and I

have managed to maintain and certainly loose a bit of weight sice switching

to vegan adn Ifeel a lot better, but I thought it might also be a good side

effect to get my weight to someting a litte healthier. Thanks in advance. I

anyone else has any comments please feel free.

Hi Daira,

 

Sorry I haven't answered you sooner. I've been busy with old house

construction and work, too busy I guess to check out this group for

some time.

 

Understand that I needed to lose weight at the time. I had lost 40

lbs and was happy with that, but when I kept losing weight and

couldn't keep it on, it worried to me. Also, I was receiving a lot

of pressure from my boyfriend at the time (my husband now) and going

through a divorce, the death of my mother and running several miles

daily to deal with the stress of everything that I'm sure it all

contributed to my excessive loss of weight.

 

What I recall eating back then is hard to remember, but a typical

daily meal would be something of this sort: Two slices of toast or

some other grain source, huge salad with beans or chic peas at

lunch, beans and rice dishes at dinner or any other type of vegan

casserole fair (tofu and veggies, lentils and brown rice, etc). I

did not eat much junk food. I would indulge in vegan cookies from

time to time, sometimes some rice cream.

 

Now, being vegan and keeping my weight normal is easier. I do not

run as many miles and only 4 times a week. I rarley eat salads for

lunch; I use the meat analogs for a sandwhich. I think I ate

healthier back then and the biggest challenge now is not having a

kitchen to cook in. As I said, our house is under

major " destruction " and I have been cooking on a camp stove since

January. It's tough to cook; and not having a proper area to prepare

food has also kept me to eating p-butter sandwhiches, meat analogs

and other prepared foods. Clearly, I am not eating as many veggies

as I should and I rarely eat fruit. Never was a fan of fruit. Love

veggies, though.

 

And I still get pressure from my husband. Since I've joined this

group a few weeks ago, I have had dairy again, though rare, from

time to time. My addiction to animal products such as cheese is not

defeated yet. However, I am pleased to report that I have become

lactose intolerant, found this out two weeks ago after being dairy-

free for a good six weeks and then eating a dish that contained

cheese. I paid for this dearly, though not as dearly as the poor

animal who suffered for my selfish indulgence. I am quite ashamed

for the purposeful slip up. Fortunatley, the lactose intolerance I

have is the perfect amuinition I need to stand up to my husband. I

know I should be strong enough to stand on my own two bi-pedal feet,

but sometimes the pressure is from him is just a convenient excuse

to indulge in an animal addiction.
