Guest guest Posted October 13, 2008 Report Share Posted October 13, 2008 Mixed Veggie Bhajis Bhajis are small vegetable fritters often sold on street stalls in India. 1 teaspoons vegetable -OR- rice bran oil, plus extra, to shallow-fry 1 large brown (yellow) onion, cut in thin rings 3/4 cup chickpea flour 3/4 cup GF self-raising (self-rising) flour (see Note) 1 teaspoon garam masala 1/4 teaspoon turmeric powder 1 1/2 cups frozen mixed veggies (corn, peas, celery, onion and capsicum [bell pepper]) 1/2 cup finely chopped fresh coriander (cilantro) plain soy yogurt, to serve 1. Heat 4 teaspoons oil in n large non-stick frying pan over moderate heat. Cook and stir onion for 5 minutes or until golden. Drain on paper towels. Cool. 2. Sift flours with spices into a large mixing bowl; stir in onion, veggies and coriander (cilantro). 3. Gradually stir in 1 cup water until smooth. 4. Pour oil into a large, deep non-stick frying pan to a depth of 3 cm (1 1/4 " ). Heat over high heat (when a cube of bread browns quickly without absorbing any oil). 5. For each fritter, place 1/4 cup mixture into pan; flatten slightly. Cook fritters, 3 at a time, for 2 to 3 minutes each side or until golden and crisp. Drain on paper towels. Serve with yogurt. NOTE: You can use an all purpose GF flour blend and add GF baking powder at the rate recommended for your brand. Serves 4 (12 fritters).
