Many of these mixes have a short date, which is why the clearance sale, but

the shelf life can be extended between 3 and 6 months by freezing the mixes

and warming to room temperature before use.

For anyone who is interested, my family routinely uses vegetable puree

instead of eggs for breads, most of the cakes, and cookies made from these

mixes. We use 1/4 cup of puree PLUS 1 tsp of extra baking powder for each

egg.
