Guest guest Posted September 21, 2008 Report Share Posted September 21, 2008 These were so yummy! Thought I'd share w/ you all as eggplants are all over the place (at least in upstate NY!) I didn't measure much, but this is what I did: Ingredients: 1 eggplant 2 T enerG egg replacer mixed w/ 4 T warm water splash of rice milk gf all purpose flour (maybe 1 cup?) crushed crispy rice cereal (maybe 1/2 cup?) pinches of Italian seasonings and basil oil for quick frying marinara sauce for serving (or eat them as a crispy snack w/out!) Peel one eggplant and cut into THIN slices (the thinnest ones came out best), put them on paper towels to absorb the moisture and sprinkle a little salt on top as well... Mix enerG egg replacer (2 T w/ 4 T warm water) with a splash of rice milk milk in one bowl Mix a gf all purpose flour mix (mine contains millet flour, sorghum flour, br. rice flour and potato starch) w/ a pinch of Italian seasonings and basil, along w/ some crushed crispy rice cereal in another bowl Heat up some oil in a skillet (I used sunflower oil) Dip the eggplant into the flour mix FIRST, egg/milk sub mix 2nd, then into the pan to fry for a few minute (flipping 1x, then place them on a cookie sheet to be baked in the oven for about 20 minutes on 350. I fried them quickly to give them a crispy taste, but most of the cooking is done in the oven. (You could also *just* fry them and eat w/out baking--they tasted yummy right out of the skillet as well!) Also, dipping the eggplant in the wet mix just b/4 putting them into the skillet for frying worked best for me, otherwise the skillet got all full of flour which burned up and made a smoky mess! I served it w/ a marinara sauce I made (any kind would work), and they were sooo yummy! The thinner they were, the crispier they came out! Soooo delicious! The mushier ones were good too, but I loved the crisp ones... I'm sure they would be good w/ a soy cheese as well, but we are sf--and I didn't feel like I was missing out!! Enjoy!
