Guest guest Posted September 16, 2008 Report Share Posted September 16, 2008 *RECIPE OF THE DAY* *Beany Pumpkin Burgers* *Metric* *Ingredient* *Imperial* 15 ml vegetable oil 1 tbsp 40 ml pumpkin seeds 3 tbsp 1 onion, finely chopped 1 1 red chilli, seeded & finely chopped 1 - can cannellini beans, drained & chopped 14 oz 50 ml fresh breadcrumbs 1/4 cup 1 egg, beaten 1 15 ml lemon juice 1 tbsp 30 ml fresh parsley, chopped 2 tbsp ------------------------------ *Directions* In a large skillet; heat oil. Add pumpkin seeds, onion and chilli. Gently cook for 5 minutes. Remove from heat. Stir in beans, breadcrumbs, egg, lemon juice and parsley. Add salt and pepper if desired. Shape mixture into patties. In a large skillet; heat a small amount of oil. Add patties and fry for 3 to 4 minutes each side until golden brown. Serve on hamburger bun.
