Guest guest Posted September 18, 2008 Report Share Posted September 18, 2008 Dried Fruit and Vanilla Compote 1 cup caster (superfine) sugar 1 vanilla bean, halved lengthways 750 g (26 1/2 oz) dried fruit salad 1. Combine caster sugar, vanilla bean and 1 1/4 cups cold water in a saucepan over low heat. Cook, stirring, for 5 minutes or until sugar has dissolved. 2. Bring to the boil. Reduce heat to medium. Simmer for 5 to 7 minutes or until slightly thickened. 3. Add dried fruit. Remove from heat. Set aside for 30 minutes, stirring occasionally. 4.
