Date, Pistachio, Orange & Mint Salsa

 

 

5 fresh dates, pitted, chopped

8 teaspoons (30 g)(1 oz) pistachio kernels, finely chopped

1/2 cup shredded fresh mint leaves

2 oranges

 

 

1. Combine date, pistachio and mint in a bowl.

 

2. Peel and segment oranges, reserving membrane. Cut orange segments

in half. Add to salsa.

 

3. Squeeze reserved orange membrane over salsa. Discard membrane.

 

4. Toss gently to combine. Serve.

 

 

Serves 4.
