Guest guest Posted September 15, 2008 Report Share Posted September 15, 2008 Artichoke & Cannellini Bean Salsa 100 g (3 1/2 oz) marinated artichoke hearts, drained, chopped 400 g (14 oz) can cannellini beans, drained, rinsed 1/2 cup finely chopped fresh parsley leaves 4 teaspoons lemon juice salt and pepper, to taste pinch paprika, to serve 1. Combine artichoke, beans, parsley, lemon juice, salt and pepper in a bowl. 2. Top with paprika. Serve. TIP: For an extra flavour boost, add 4 teaspoons of the artichoke marinade to the salsa.
